This month the AAA Five Diamond resort Grand Velas Los Cabos announced the appointment of a new executive chef. Vincent Wallez is the culinary talent who’ll be taking up this prominent new position. Here he’ll oversee the resort’s entire dining offering, from catering and 24-hour room service to the pool and beach-side dining. This appointment is effective immediately.
Before taking up this new role, Wallez spent 14 years in the culinary field. He was most recently the executive chef of NIZUC Resort and Spa in Cancun. And prior to that he was the executive chef of Belmond La Samanna on St. Martin in the Caribbean. During his career, the chef has expanded his culinary knowledge through travel, learning about different cultures and their traditions. This inspiration is fused with his own French roots; originally from Bayonne in the southwest of France, Wallez spent time in the kitchens at the renowned Bristol and Plaza Athénée hotels in Paris before moving to Mexico.
