Celebrity Hong Kong chef Harlan Goldstein pays homage to the world’s rarest and most expensive delicacy, celebrating white truffle season with a contemporary gastronomic twist to traditional recipes at one of the city’s most renowned dining destinations, Lan Kwai Fong’s bold and sensual Gold restaurant.
His annual culinary tribute showcases a menu of eight elaborate but discernibly mouth-watering dishes, each featuring two carefully measured grams of the prized underground tubor, freshly hunted by trained pigs and dogs in the autumn forests of Italy’s flavor-filled Piedmont region.
White truffle dressing introduces the delicate flavor without overwhelming the senses, and should be selected with the recommended appetizers of prime beef tartar and Burrata cheese. Another farmhouse favorite complements savory beef carpaccio and soft Taleggio provincial cheese on earthy, sweet spring onion flatbread.
The most traditional Alba-style recipe shaves white truffle on simply sumptuous tagliolini pasta with Italian white butter and Parmigiano.
Keeping with this tradition is the rustic marriage of soft Italian scrambled egg with snipped chives. Hand-crafted ravioli comes deliciously infused with melting egg, Ricotta cheese and hazel nuts, while forest-flavors can be experience with the beef short rib risotto and wild mushroom, again lusciously twinned with soft-cooked organic egg.
The gastronomic menu extends to white truffle embellishing a familiar Piedmont partnership of Pecorino cheese and cauliflower cream custard, topped with Iberico ham from preeminent Spanish producer 5J.
