Maaemo roughly translates to “Mother Earth,” a concept that is clearly evident in this restaurant’s cooking, with fresh Norwegian produce used throughout the 20-course menu.
Danish chef Esben Holmboe Bang carefully combines the fresh flavors of Norway using innovative techniques, earning him accolades from around the world. In 2012, just 15 months after opening, Maaemo gained two Michelin stars in its first ever mention of the guide, the first restaurant in Scandinavia to do so.
