Ritz-Carlton, Cancun Serves Up New Executive Chef

Living and working in various parts of the world may be the ideal ingredients for a spectacular culinary background and this is definitely the case of Jordi Valles, new Executive Chef of The Ritz-Carlton, Cancun. In his new position, Jordi oversees the resort’s entire culinary operation, including the prestigious Five Diamond restaurants, Fantino and The Club Grill. Being responsible for six restaurants, room service and all banquet services, Chef Valles orchestrates a team of over 70 dedicated chefs and cooks ranked among the best culinary teams in North America.

Barcelona native, Jordi is one of the few chefs who refined his natural talent with the three great masters of the new trend-setting Spanish cuisine: Pedro Subijana at the Akelarre restaurant, Juan Mari Arzak at Arzak and Ferrán Adrià at El Bulli, which are all three Michelin Star-rated restaurants. His passion to discover the products and traditions of gastronomy has led him to work beyond his native Spain in cosmopolitan destinations around the globe like France, China and the United States. Today, Jordi is one of the few chefs in Mexico that present, in an original yet authentic manner, the fusion of classical techniques with the latest trends.

“Gastronomy, I believe, is the best way to express yourself. Integrating harmoniously the aromas, products and techniques of the country you live in, paired with your own personal style, is an art that inspires me to satisfy a cross-section of the world’s most sophisticated palates” mentioned Jordi Valles. “At the Ritz-Carlton, Cancun it is my intention to immerse guests in a culinary journey of new flavors by using farm-to-market ingredients that reflects the cultural richness of México and to create consciousness of the importance of using organic and sustainable products” he added.

Jordi Valles is familiar with the high standards of The Ritz-Carlton Hotel Company, before his appointment as executive chef, he has held various positions in properties such as Hotel Arts in Barcelona, The Ritz-Carlton Key Biscayne, The Ritz-Carlton, Amelia Island and even served as chef de cuisine of Fantino and The Club Grill in 2000.

To celebrate the appointment of Chef Jordi, the resort is offering the exquisite Endless Flavors package available through December 15, 2010. Starting at $739 per night for two adults, is inclusive of a luxurious full food and beverage plan with complete A la Carte menus for breakfast, lunch and dinner at all restaurants and in-room dining. Additional features are: deluxe accommodations in an ocean view room, daily wi-fi internet access and overnight valet parking.
