Al Faisaliah, A Rosewood Hotel Introduces New Menu at La Cucina

Al Faisaliah, A Rosewood Hotel’s signature Italian restaurant, La Cucina, has introduced a brand new menu along with a new Chef de Cuisine.

La Cucina—a contemporary Italian restaurant locatrestauranted in the ultra-fashionable Al Faisalah Mall in Al Faisaliah, a Rosewood Hotel’s stunning South Wing—has just introduced a new mouth-watering menu. Created by the recently-appointed Chef de Cuisine Nicola Russo, the menu takes a modern twist on authentic Tuscan food. As a native Italian with ten years of culinary experience across the globe, Russo is using his global experience to bring all the flavors of Tuscany to Riyadh.

The new menu includes Italian classics such as the caprese, made from fresh basil leaves, juicy tomatoes, and buffalo mozzarella, as well as Tuscan twists like the Uovo 64, an organic slow cooked egg with green and white asparagus and porcini mushrooms. Other specialties include the Paccheri, a dish made with tube shaped pasta in a eggplant and cherry tomato sauce,

served with burrata cheese, and the Trancio di salmon, a slow cooked salmon filet with potato fondant and basil oil-drizzled asparagus.

Trained in Italy and certified by Academy “Les Amies de Cordon Bleu”, Russo’s experience spans several Michelin star restaurants, including Alloro Restaurant in London.
