“Known mainly for its Volkswagen car plant, Wolfsburg seems an unlikely setting for a three Michelin star restaurant—but Aqua is well worth the trip. The technique on display is considerable, and the sourcing of ingredients shows considerable care and attention. My main course was a fine modern take on a classic beef stroganoff, consisting of fillet of stunning Simmental beef, a spicy tartare of the same beef, alongside fondant potato, sour cream, gherkins and beetroot. At my request, the sommelier skillfully concocted an excellent pairing of German wines. The service was perfect. Overall, this is a restaurant that thoroughly deserves its three stars.”
