Style/Ambiance: Australian head chef David Thompson has lived in Bangkok for twenty years studying the complexities of Thai cuisine – from vibrant street food to intricate royal dishes – and has penned two acclaimed books on the subject.
Thompson’s Nahm restaurant at the Halkin Hotel in London was the first Thai restaurant to be awarded a Michelin star and Thompson is now concentrating his efforts on the new Nahm restaurant in Bangkok. Nahm’s menu is inspired by 19th century royal gastronomy which Thompson claims is the pinnacle of Thai cooking.
